Cooling systems from Plascon Food Solutions and DCN are a key component in the Cook-Chill method of food preparation. Following cooking, foods are packaged at above pasteurization temperature, then quickly cooled to below 40 ºF with cooling times and temperatures full logged. Chilled packages are then placed in chilled storage at 33 ºF and can be stored for up to 45 days. All DCN Cooling equipment can be integrated with a range of other equipment including DCN Cooking equipment and Dispensing & Filling Systems. All chillers are manufactured completely in stainless steel.
(2) Tumble Chillers from Plascon Food Solutions & DCN are designed to chill most filled hot casings from 185 ºF to 39 ºF in 60-90 minutes depending on the foods heat retention properties. Key component in the Cook-Chill method of food preparation where foods are prepared in bulk, then stored and distributed for reheating. Foods retain their “just made fresh” taste, texture and aroma. Ideal for soups, sauces, pasta dishes, ready meals, etc.
